    Sausage and Rice Casserole

Say hello to your new favorite one-pot meal! Sausage, rice and broccoli baked together for a delicious easy casserole meal!

Rice, sausage, and broccoli in a cast iron skillet.

This one-pot meal is sure to become a family favorite!

Kid-friendly, chef-friendly, delicious - what more could you ask for. Browned sausage, perfectly cooked rice and crisp tender broccoli.

    Ingredients.

Italian sausage - you can use spicy Italian sausage to kick up the heat a little. You can also use chicken sausage to keep it a little lighter. I've made it with both pork Italian sausage and chicken and it was equally delicious!

Onion and garlic - you can also use leeks or shallots. I've also used the garlic paste that comes in a tube to make it even easier.

Rice - I typically use Arborio rice because it's a little creamier, but you can use regular white rice. If you substitute brown rice, you will need to cook it longer before adding the broccoli.

White wine and chicken broth - you want to use a white wine that you would drink. Do not use the "white cooking wine" that you find in the grocery aisle if you can help it, it does not have the same flavor as a drinking wine. Good chicken broth or stock is also necessary, homemade is best if you have it.

Broccoli - I've also made this with green beans! You could use cauliflower too!

Rice, broccoli and sausage in a cast iron skillet.

This baked sausage and rice with broccoli will become a family favorite! You'll love it because it's so easy to make and everyone else will love how delicious it is!

This is one of those formula recipes, once you have the techniques down, you can vary the sausage and the vegetables.

I found this recipe in an old Martha Stewart cookbook, many years ago. I change it up a little every time I make it!

    Sausage and Rice Casserole

This sausage and rice baked casserole is so easy and with the addition of broccoli, it's a one-pot meal!

    Calories 531kcal

    Ingredients

    • 2 tablespoons extra virgin olive oil
    • 8 ounces Italian sausage casings removed
    • ½ cup onion finely chopped
    • 3 cloves garlic minced
    • 1 ¼ cups arborio rice
    • ¼ cup dry white wine
    • 2 ¼ cups low-sodium chicken broth
    • 2 cups broccoli rabe cut into ½ inch pieces or broccoli florets

    Instructions

    • Preheat oven to 400. Heat a large, ovenproof skillet (cast iron is perfect) over medium high heat. Add sausage, breaking it up and cook until lightly browned about 5 minutes. Add onions and garlic and continue cooking about 3 more minutes.
    • Add the rice and stir until rice is coated. Add the wine and bring to a boil and cook until the rice absorbs most of the wine. Add the chicken broth and bring to a boil.
    • Remove from the burner and place skillet in the oven. Bake for 10 minutes. Add the broccoli on the top and continue to back for an additional 10 minutes. Remove from the oven, stir and then let stand for about 10 minutes before serving.

    Notes

Sausage - you can use regular Italian sausage or chicken works well too!
Rice - arborio or regular white rice.  If you use brown rice you need to increase the temperature.

Seriously this was so crazy easy and so warm and comforting.  Nice and simple, just how I like my autumn meals.  And besides, doesn't everything look better in an old cast iron skillet!

Oh wow! It got cold here a week ago (down to 55 degrees at night), but lately it's been warm again. Hello, 80's! I'm not sure that I'm ready for it to get cold again! Last winter was brutal for me! XD

Anyway, this recipe looks great! 🙂

I turned on the heat the other night for the first time too this season, Pam. I wasn't happy about it at all but, when I found Marion chattering over her cup of morning teas, I just had to give in.

Don't get me wrong, I like Fall, the clothes, the seasonings and yes the one pot comfy meals. I just wasn't prepared this year. Am I ever???

This is my kind of Fall meal too with or without the Broccoli Rabe. Thanks so much for sharing, Pam...

I was thinking earlier that we don't have much color yet, but it was a chilly weekend, and it can only get worse. Still, I do enjoy the change of seasons.
