If you're looking for a refreshing, easy sipping cocktail, then look no further...the Pimm's Cup is perfect! Made with Pimm's Cup liqueur, ginger beer, ginger ale or lemonade and garnished with cucumber and fruit, it's the perfect sipping cocktail!

Light brown cocktail garnished with orange wheel, strawberry, cucumber and a mint sprig.

On a whim, I picked up a bottle of Pimm's. I had heard of a Pimm's Cup cocktail and enjoyed looking at the fun garnished glasses, but I had never had one or made one.

I had only heard of Pimm's No. 1, which is the original liqueur. It is a gin based spirit with floral notes from herbs and botanicals. It was invented in 1840, but became popular when becoming the drink at Wimbledon in 1971.

Apparently there are 6 Pimms Cups, but only 1, 6 and 3 (a winter cup) are still available. No. 6 is a vodka based and I will definitely be on the lookout for it.

Pimm's No. 1, ginger beer, mint, orange, and a cucumber.

    Ingredients

    Pimm's No. 1 - a floral gin based liqueur.

Ginger Beer - or ginger ale or lemonade.

Note - the classic Pimm's Cup calls for lemonade or sparkling lemonade. I like to punch it up a bit by using ginger beer. You can also use ginger ale for a little bit less of a ginger bite, or stick with the classic lemonade.

Garnishes - mint, orange wheel, cucumber, and strawberry.

    Instructions

Fill a collins glass with crushed ice.

Pour in 2 ounces of Pimm's.

I like to add my orange slice now because it is easier to wedge it in before you top with the ginger beer.

Top with ginger beer and garnish with cucumber wedges. If you are skilled, you can do those thin slices of cucumber and wrap them around the inside of the glass.

    I am not that skilled.

Finish garnishing with a mint sprig and a strawberry.

Two light brown cocktails garnished with an orange wheel, a strawberry, cucumber sprigs and a mint sprig.

This was such a fun and easy cocktail! The hardest part was slicing the orange and the cucumber!

It was so refreshing, I'll definitely be making these all summer long!
