    Sticky Lime and Ginger Chicken

    This Sticky Lime and Ginger Chicken from Donna Hay magazine called for the chicken to be served over gai larn.  After Googling and reading about it, I figured out that Gai Larn was Chinese broccoli or Chinese Kale.  Since we don’t have a big international grocery store here, and my regular grocery stores aren’t all that adventuresome, I didn’t even attempt to find it.  What I thought I would do would be use some edamame instead.  I know…nothing like gai larn, but still it fit with the whole Asian feel.

    So, I went looking in my freezer for where I thought I had some edamame.  What I found instead was three bags of frozen peas!  I don’t even like peas all that much, but there they were.  To keep it simple, I cooked the rice in the rice cooker and during the last few minutes of steaming, opened up the lid, poured in the frozen peas, closed the lid and let them steam until crisp tender.  This was perfect and may be what I do now from now on when I’m serving a stir fried chicken over rice.  It keeps me from having to make a second side dish of veggies.  A bag of frozen corn or even mixed vegetables would have worked just as well.

    Since I am not calling this a rice cooker recipe, I wrote the instructions to add the peas to the chicken and then serve over rice.  However if you have rice cooker, try my instructions above, it's so easy!

    Sticky Lime and Ginger Chicken

    This Sticky Lime and Ginger Chicken is a kid friendly recipe can be on your table in under 60 minutes!!

    Ingredients

    • ¼ cup honey
    • 2 tablespoons oyster sauce
    • 1 tablespoon lime juice
    • 1 tablespoon fresh ginger peeled and finely grated (I store mine in the freezer – makes grating so easy!)
    • 2 cloves garlic crushed
    • ¼ cup water
    • 2 tablespoons peanut oil
    • 8 boneless skinless chicken thighs cut into strips
    • 1 lime thinly sliced
    • 2 cups peas thawed if frozen
    • shredded green onions
    • steamed rice to serve

    Instructions

    • Place the honey, oyster sauce, lime juice, ginger, garlic and water in a bowl and mix to combine.  Set aside.
    • Heat the oil in a large wok or non-stick skillet over high heat.  Add the chicken and cook in batches for 6 minutes or until cooked through.  Add the honey  mixture and lime and bring to a boil.  Cook for 2-4 minutes or until thickened slightly.  Add the peas, cook until they are warmed through.  
    • Arrange the chicken on a platter and top with the green onions. Spoon over the pan sauce and serve with rice.

      Pam I'm a bit like you in that finding ingredients for Asian dishes is challenging and I love what you have done to make this dish a real family meal. Ginger and lime works so well - it looks delicious!

      I thought I had edamame in my freezer and found 2 bags of lima beans. 😉 This dish looks so full of flavor and I like the peas too.

      gai larn/peas rice/noodles....what's the difference? Ha ha! It's all good! This dish looks fantastic, Pam. Joanne is right. The stir fry sauce sounds amazing and the chicken looks perfectly saucy and delicious. This is my kind of meal.
