    Ginger Apple Popsicles

    Ginger beer and fresh apples make the most refreshing popsicle! A little kick of heat from the ginger, the sweet tartness from the granny smith apples, and a little citrus zing from the lime juice. So good!

    Once you start making your own homemade popsicles, you will never go back to store-bought! It's so easy to find popsicle molds now, there is absolutely no reason to not make your own!

    Homemade popsicles can be made with fresh ingredients, organic if you'd like. You can make them as healthy or as decadent as you'd like. You can make popsicles for kids and you can make popsicles for grown-ups!

    Even though there is actually no alcohol in ginger beer, I consider the Ginger Apple Pops more of a grown-up popsicle. The ginger has a lot of flavor and even a little kick of heat. They are so refreshing in the summer!

    Ingredients and substitutions.

    • Sugar - I use regular white sugar or organic cane sugar. You could make a honey simple syrup by replacing the sugar with honey.
    • Ginger beer - gives it the kick and the heat. You could use ginger ale, but it's a much sweeter, less punchy popsicle.
    • Lime juice - freshly squeezed. Gives it a nice citrusy kick.
    • Granny Smith apple - you could use other apples, but I wouldn't recommend it. Granny Smiths stay crisp and tart and pair perfectly with the ginger.

    Instructions.

    You begin by making a simple syrup. Combine the sugar and water in a small saucepan. Stir over low heat until the sugar dissolves. Cool to room temperature.

    In a bowl or large measuring cup with a spot, combine the simple syrup, ginger beer, and lime juice. Very thinly slice the granny smith apples, I like to use a mandoline for this. To fit into your molds, you might need to cut them in half or strips.

    Place some apple slices, I like to use 1 or 2, in each mold and pour over the ginger beer mixture. Freeze for at least 4 hours.

    While I love my ice cream maker, making popsicles is so easy! Plus the portion control is great! I tend to get a little carried away when I'm scooping ice cream!

    These were so yummy!  Very much a grown-up popsicle!  The ginger brew gives it a heady spicy taste, with lots of ginger heat.  Then the apples provide a welcome bite of sweetness.  Perfect and oh so easy!

    Apple Ginger Popsicles

    These Apple Ginger Popsicles get a kick of ginger heat from ginger beer and a tangy sweetness from Granny Smith Apples.

    Ingredients

    • ½ cup sugar
    • ¾ cup water
    • 1 ½ cups ginger beer
    • 2 tablespoons lime juice
    • 1 small granny smith apple very thinly sliced

    Instructions

    • Combine the water and sugar in a small saucepan. Stir over low heat until sugar dissolves. Turn off the heat and let cool to room temperature.
    • In a bowl or cup with a spout, combine the ginger beer, simple syrup and lime juice.
    • Place a slice or two of the apple in each popsicle mold and pour in the ginger beer mixture. Leave at least ¼ inch headroom for expansion. Add the sticks.
    • Freeze for at least 4 hours.

    Notes

    This recipe will fill 8 - ⅓ cup popsicle molds. 
    Can substitute ½ cup of honey for the sugar.

      Fantastic! I've been wanting to make pops with a coconut sorbet recipe I found. These molds will be perfect and if I get two sets, I can make the coconut and try the ginger beer ones!
