    10 Minute Bruschetta

    Turn tomatoes, capers, and olives into a light lunch or appetizer with this 10 Minute Bruschetta recipe!

    When my CSA provided me with some gorgeous heirloom tomatoes, I knew that a quick bruschetta would make a fine lunch! It also makes a great appetizer recipe!

    In the time it takes to toast the bread, you can thinly slice the tomatoes and get your jars of olives and capers out of the fridge. Anyone else buy those huge jars of capers and kalamata olives from Costco? They are a staple at my house!

    Ingredients.

    This recipe is so versatile. You can use all of the ingredients, some of the ingredients, or even add ingredients.

    • Tomatoes - heirloom tomatoes are delicious, but you can use store bought, especially if they are on the vine. I find those more tasty.
    • Bread - any good crusty bread will do. I had a homemade peasant loaf, which has some whole wheat and rye flour, which is why my bread is a little darker than yours might be. Sourdough is always an excellent choice.
    • Olives - I used kalamata olives, you can use any olives that you enjoy. Castelvetrano are also a favorite.
    • Capers - most recipes called for those packed in salt, but I can never find them. So I just use jarred in liquid. It works for me.
    • Olive oil - use a good quality extra virgin olive oil, it will add a lot of flavor here.
    • Red wine vinegar - adds a little tartness. You could also use basil vinegar or chive blossom vinegar.

    Step by step instructions.

    Step one - toast the bread. Some people like to to toast the bread in the oven. I feel that sometimes it dries the bread out too much. I prefer to spray or brush the bread with olive oil and toast it in a grill pan. You can use a grill pan, a skillet, or even grill the bread.

    While the bread is toasting, thinly slice the tomatoes, and chop the olives.

    When the bread is toasted to your liking. Place the bread on your plate or platter and top with the thinly sliced tomatoes. Drizzle the tomatoes with a bit of olive oil, a sprinkle of salt and a few drops of red wine vinegar.

    10 Minute Bruschetta

    Tomatoes, olives, and capers make an easy and delicious 10 minute appetizer or lunch!

    Ingredients

    • 1 large tomato thinly sliced
    • 4 slices bread sourdough or baguette
    • 1 clove garlic peeled, cut in half
    • ½ cup kalamata olives diced
    • 2 tablespoons capers rinsed if salted, or drained
    • extra virgin olive oil
    • red wine vinegar
    • kosher salt or a finishing salt

    Instructions

    • Spray or brush the slices of bread with oil. Place in a grill pan or skillet and medium high heat and cook until toasted. Flipping to toast both sides.
    • Place toasted bread on a platter and rub one side with the cut garlic.
    • Layer the thinly sliced tomato on the bread. Drizzle with a little of the olive oil, sprinkle with salt, and shake a bit of the red wine vinegar on top.
    • Top with the olives and the capers.

    Notes

    Bread - sourdough, peasant loaves, baguettes, all work.
    Olives - kalamata or your favorite olives. 
    Tomatoes - heirlooms or vine-ripened for best flavor.

      Yep, sounds like cooking to me too . . . the easier the better!! Sometimes there is just less time and this is perfect. I'd totally love this for a light snackish dinner after having a larger lunch.

      Trader Joe's has a great jarred Bruschetta too! When are you guys gonna get a Trader Joe's???

      Sounds good to me, even the simplest things are sometimes more than what other non-cooks do! Thanks for posting this, we like to know about good quality jarred foods! We should be getting a Cosco by us soon!

      LOL....Sometimes I take my hubby out to lunch at Costco. I love their Bruschetta...Their samples cause me to spend more money than I normally plan to spend. Love your blog...

      That sounds like cooking to me -- and it's more than I have done all week! Sometimes I buy things at Costco on a whim, and they turn out to be totally delicious products. I don't have that experience at any other big box store, but Costco's food is really a cut above. (And they're not paying me to say that.)
