    Mixed Berry Crisp

    Summer berries really shine in this mixed berry crisp!  Fruity and sweet, especially yummy when topped with vanilla ice cream.  This is the perfect summer dessert, so easy!  Use whatever berries you have, we used strawberries, blackberries, blueberries and raspberries!

    Whenever summer berries go on sale or show up at the farmer's market, I buy as much as I can. The season is so fleeting, especially with delicate berries like raspberries.

    I made Raspberry Chocolate Chip Frozen Yogurt and Strawberry Chia Jam, but still every time I opened the fridge, my berry cartons took up almost half a shelf!

    I had an assortment of berries left in each carton, what I needed was a recipe to finish all the berries left in my fridge.

    Crisps are one of my favorite ways to use fresh fruit, so how about a mixed berry crisp!

    Butter, brown sugar, oats, flour, sugar, flour, cardamom, and mixed berries in a bowl.

    Ingredients

    Butter - unsalted. If using salted, don't add a pinch of salt to the topping.

    Brown Sugar.

    Oats - I used quick cooking oats, you can use old fashioned or regular, but do not use steel cut oats.

    Flour - I used white all purpose, you can substitute your favorite flour. I used some in the topping and some with the berries.

    Sugar - I used white sugar for mixing with the berries.

    Cardamom - I love the flavor of cardamom with the berries, you can substitute cinnamon.

    Mixed berries - I used a combination of strawberries, blackberries, blueberries, and raspberries. You can use whatever combination you would like, you need a total of 5 cups of fruit.

    Instructions

    Preheat oven to 350.

    Place berries in a bowl. Quarter the strawberries if they are large.

    Add the sugar, flour and cardamom to the berries and stir to combine.

    Spoon berries into a tart pan or pie plate.

    In the same bowl that you stirred the fruit (no need to dirty another bowl!) add the oats, flour, brown sugar, and a pinch of salt. Cut the putter into ¼ inch dice and add it to the bowl.

    I just use my fingers to work the butter into the oats, until a coarse crumb forms.

    Spoon the topping over the berries.

    Bake for 50-60 minutes or until the topping is golden and the crisp is bubbling.

    Let rest for 10 minutes before serving.

    I'm not thrilled with my photos, I don't think they do this amazing dessert justice. But, it smelled so good and the ice cream was melting and well....

    I'm not one of those bloggers that spend a day cooking and taking photos and it's more of a production. There is nothing wrong with that, it's just not me. I am taking photos right before I'm about to eat, so what you see are some photos snapped quickly as everyone waits to dive in!

    And...dive in, we did! This was so good. Really good. Like you need to make this right now good.

    Mixed Berry Crisp

    Summer berries get topped with an easy oat topping that bakes up crispy and sweet! So easy! Lovely topped with a scoop of vanilla ice cream.

    Ingredients

    Berry Mixture

    • 2 cups strawberries
    • 1 cup blueberries
    • 1 cup raspberries
    • 1 cup blackberries
    • 3 tbsp sugar
    • 2 tbsp flour
    • ¼ teaspoon ground cardamom or cinnamon

    Crisp Topping

    • ⅓ cup oats
    • ⅓ cup all-purpose flour
    • ⅓ cup brown sugar
    • 3 tbsp butter cut into ¼ inch dice
    • salt pinch

    Instructions

    • Preheat the oven to 350.
    • Combine the ingredients for the berry mixture in a medium bowl. Stir to coat the berries.
    • Spoon berries into casserole dish or pie plate.
    • Combine the topping ingredients in a bowl. Using your fingers, work the butter into the dry ingredients, until it forms a coarse crumb.
    • Spread topping on berries.
    • Bake for 50 to 60 minutes, or until golden and bubbly.

    Notes

    Use whatever berries you have - you just want a total of about 5 cups.
    Can use whole wheat flour in the topping if you'd like for a little bit of a nuttier flavor.
    Can substitute cinnamon for the cardamom.

      I love all kinds of crisp in the summer. Peach and apple are favorites in my house but this is a great way to use up all the berries I have at once. Love this with a scoop of vanilla on top!
