    Thai Chicken Noodle Bowl

    This Thai Chicken Noodle Bowl is the easy dinner that you'll put into regular rotation! With shredded cooked chicken, red onions, cucumbers, tomatoes, and noodles in a tangy Thai inspired sauce!

    I love having easy recipes to get dinner on the table quickly. Especially when they are Thai-inspired, a favorite around here!

    Using a rotisserie chicken, or some simple Poached Chicken, makes this even easier! I used some chicken that I had canned, so mine came out very shredded!

    The bright fresh flavors of this noodle bowl will have you coming back for more!

    Instructions.

    Cook your noodles of choice according to package directions. Drain and rinse.

    Prepare the dressing in a large bowl by combining lime juice, fish sauce, oil, and sugar. I also like to add the chopped pepper at this point to allow it to evenly infuse it's heat through the dressing.

    Prep the vegetables, by thinly slicing the cucumbers, dicing the tomatoes, chopping the tomatoes, and thinly slice the red onions. I like to use my Quick Pickled Red Onions. If you don't have already pickled onions, you can add the thinly sliced onions to the dressing first and let them soak in it while you prep the rest of the vegetables.

    Add all the vegetables and the chicken to the bowl and toss to combine. Then add the noodles and toss again.

    Sprinkle with toasted peanuts for serving.

    Thai Chicken Noodle Bowl

    Easy and delicious Thai Noodle Bowl uses rotisserie chicken to get dinner on the table quickly!

    Ingredients

    • 2 cups cooked chicken shredded
    • 8 oz noodles pasta of your choice
    • ½ cup lime juice fresh squeezed
    • 1 tbsp fish sauce
    • 1 tbsp peanut oil or any neutral oil
    • 1 ½ tbsp sugar
    • 8 oz cherry tomatoes halved
    • ½ small red onion thinly sliced
    • 1 cucumber preferably Persian, thinly sliced
    • 1 red chile pepper seeded and thinly sliced
    • ½ cup cilantro leaves chopped
    • ⅓ cup roasted peanuts coarsely chopped

    Instructions

    • Cook pasta according to directions, drain and rinse.
    • While pasta is cooking, combine lime juice, fish sauce, oil, and sugar in a large bowl. Add the sliced onions and the pepper to the dressing to soak while you prepare the rest of the vegetables.
    • Combine the noodles, chicken, tomatoes, cucumber, and cilantro with the dressing and toss to combine.
    • Top with the peanuts for serving.

    Notes

    I like to add the onions and the pepper to the dressing to quick pickle the onions and to evenly distribute the heat from the pepper.

      I was going to say I've never heard of a Homegoods store, but turns out we have one just 3 miles from us and my wife informs me that I went in it with her. I have a horrible memory.

      The thai salad sounds awesome and looks great (so do the bowls, of course!).

      Made this for dinner tonight and it was great! I didn't have the same herbs you do and had to swap lemon juice for lime - but it we essentially very similar.

      I am making this sometime in the next week! And those bowls are perfect. Ah, if I only had the room. But I still have dishware in storage in Minneapolis. So, no addicting bowl shopping for me. My soup bowls will work, just not as nicely as yours!

      Oh Pam! I love these bowls! and the noodles look great.. I really need to try to spatchcocked chicken-I keep looking for that perfect chicken.. and you seem to have found it. I am also horribly inept at asian cooking.. ever time I try, I fail... Italian- you bet, southern comfort food...of course, Basque traditional fair.. obscure, but my culture..so yep. Asian.. I am sorely lacking...

      I have been in the Pottery Barn once and was in awe at all the dishes, bowls, on and on. We don't have the Homegoods store. :(And I completely understand about trying to control oneself in these type of stores.

      Loves: These bowls and the chicken and noodle salad within. Will eat your portion of limas and liver. The only thighs I like are the chicken variety. Perhaps turkey, too. Spatchcooked chicken recipes make the list, too.Dislikes: That I have never been to a Homegoods store.

      I wondered what had happened to spatchcocking this week! Great new bowls.And I think there are very few people who love lima beans, even fewer who love liver, and fewest of all who love their thighs.
