    The Honeysuckle Cocktail

    The Honeysuckle Cocktail is a delicious variation of a bees knees cocktail.  This easy 3-ingredient rum cocktail is so good!  A little bit of spice from the rum, earthy sweetness from the honey, which is all balanced perfectly with the lime!

    A Bee's Knees Cocktail Variation! 

    You might be wandering what The Honeysuckle Cocktail is!  When I googled it, I noticed that it barely comes up at all, which is a shame because it is so good! 

    I was sitting around reading through The New Cocktail Hour (yes, I sit around reading cocktail books for fun) and they mentioned on the Bee's Knees Recipe that if you replace the gin with rum you have a cocktail called a Honeysuckle Cocktail! 

    While we drink bee's knees year round, they always felt a little more spring and summer since they were so light.  Adding rum sounded intriguing and sounded like the perfect way to turn a summery bee's knees into a fall or winter cocktail!

    Ingredients to Make a Honeysuckle Cocktail

    • Rum - you can use a light or dark rum for this.  Since we wanting a warmer, fall feel to the cocktail we chose a dark rum.    Dark rums are aged longer than lighter rums and have a deeper flavor.   You could also use an Infused Rum!
    • Honey simple syrup - make your own (it's easy) or you can buy it.  
    • Limes - for fresh lime juice

    How to Make this Easy 3-ingredient Rum Cocktail! 

    Chill your glass by either placing it in the freezer or simply filling it with ice.  You'll dump the ice out right before pouring in the strained cocktail.

    Fill a cocktail shaker halfway full of ice.  Pour in 2 ounces of rum, ¾ ounce of honey simple syrup, and ¾ ounce of fresh lime juice.   Shake for about 15 seconds or until the shaker is frosted and strain into a chilled coupe glass.

    A Great Fall or Winter Cocktail! 

    After searching on Google, I know that not many people are looking for this cocktail, it is a relative unknown, which is such a shame because it is so good! 

    Depending on the rum you use you can make it as warm and spicy as you'd like.  The honey adds a sweet richness and the lime juice balances it all.  

    The best part, besides how delicious is it, is it's so easy!  You could easily make up a pitcher of these for Halloween or Thanksgiving - just look at that gorgeous color - the perfect fall cocktail!

    Honeysuckle Cocktail (A Bee's Knees variation)

    This honeysuckle cocktail is a delicious and easy bee's knees variation! Just sub rum for the gin! Warm, spicy and earthy!

    Ingredients

    • 2 ounces rum dark
    • ¾ ounce honey simple syrup
    • ¾ ounce fresh lime juice

    Instructions

    • Chill a coupe glass.
    • Fill a cocktail shaker half full of ice.
    • Add rum, honey simple syrup, and lime juice to shaker. Place a lid on it and shake for 15-20 seconds.
    • Strain into chilled glass.

    Notes

    Honey simple syrup - equal parts honey and water heated until honey fully dissolves. 
    Rum - can use light or dark rum.  Dark rum adds a bit of spiciness and a deeper flavor.
