    Mango Chicken Lettuce Wraps

    Mango Chicken Wraps made with cooked chicken, sweet mango, crunchy cucumbers, cilantro, rice, and a garlicky ginger sauce all wrapped up in lettuce!

    Chicken lettuce wraps are so easy, healthy, and delicious. With a make-your-own vibe, they are also so versatile.

    It is one of my favorite ways to use rotisserie chicken.

    Ingredients and substitutions.

    Chicken - cooked and shredded. You can use rotisserie chicken, leftover grilled chicken, or Instant Pot Poached Chicken.

    Lettuce - for wraps, I like to use Boston or Bibb lettuce, they make the perfect little cups. Of course, you could always use tortillas or another style of wrap if you didn't want to use lettuce.

    Cucumber - scrape out the seeds or buy seedless. You don't want them too watery.

    Green onions - I didn't have any on this day, but I usually include them.

    Mango - firm, but ripe. You could also substitute peaches or nectarines.

    Cilantro - fresh. Can substitute mint.

    Rice - cooked white rice. Jasmine if you have it!

    Rice vinegar, mayonnaise, soy sauce, fresh ginger, garlic cloves, and Asian Sesame Oil for the dressing. If you want a little kick to it you can add some sriracha sauce. Be sure to use toasted sesame oil, for that toasty flavor.

    Serving suggestions.

    I like to serve this in a big tray so that everyone can reach in and help themselves. You could assemble them ahead of time, but it's so much fun to let everyone make their own.

    Serving these with crisp Sauvignon Blanc is perfect!

    For those that like things a little spicy, some sliced jalapeños would be lovely.

    These are so fresh and light. The garlicky, ginger dressing is amazing! This recipe makes more than you'll need. It would be great on any kind of bowl!

    Mango Chicken Lettuce Wraps

    Light, healthy and delicious! Mangoes, chicken, cucumbers, rice, cilantro and green onions in a lettuce wrap with a garlicky, ginger dressing! The perfect light dinner or lunch!

    Ingredients

    Dressing.

    • ½ cup rice vinegar
    • ½ cup vegetable oil
    • 6 tablespoons mayonnaise
    • ¼ cup soy sauce
    • ¼ cup ginger finely chopped
    • 2 cloves garlic minced
    • ½ teaspoon toasted sesame oil

    Wraps.

    • 3 cups rice cooked
    • 2 cups chicken cooked, shredded
    • 2 heads bibb lettuce leaves separated
    • 1 cup cucumber seeded, cut into matchsticks
    • 3 green onions cut into 3 inch pieces
    • 1 mango peeled, cut into matchsticks
    • ½ cup fresh cilantro chopped

    Instructions

    • Whisk together dressing ingredients in a bowl or add everything to a mason jar and shake to combine. Add salt and pepper to taste.
    • Place all ingredients on a platter and let guests make their own wraps.

    Notes

    Can use regular tortillas or other types of wraps. 
    For a spicier option, offer sliced jalapeños.

      I agree, and I don't know how they manage to get that much breading to stick to the chicken. I've been on a lettuce wrap kick lately. So much that I started a Pinterest board for them. Pinned. 🙂

      I don't have "not so good" fried chicken in the 'fridge but I often have leftover smoked chicken and this would be a divine way to use it up! Thanks for the idea, Pam.
