Drink your desserts!
Lately I’ve been drinking my desserts. No. Not like that! Though there isn’t anything wrong with that. I’m talking about smoothies. I can’t say enough good things about my Vitamix. It took some convincing that I really needed one, but after posting a query on Facebook, all of the positive responses convinced me. It is so easy now to have a dessert that tastes good and is good for me!
My freezer is packed now with possible smoothie ingredients. I keep all sorts of frozen fruit and bags of frozen spinach, but for this smoothie, all you need are ice cubes to make it cold and frosty.
The other ingredient that I always keep in my fridge for smoothies is plain yogurt. It was perfect for this smoothie from Vitamix. The recipe calls for vanilla yogurt, but a little splash of vanilla extract makes my plain yogurt vanilla in a snap. I buy plain instead of vanilla so that it can also be used for a substitute for sour cream if I need to. All you need for this smoothie is apples, vanilla yogurt (or plain with vanilla extract), brown sugar, apple pie spice and ice cubes!
- 2 small apples, seeded and quartered
- 3/4 cup vanilla yogurt (or plain with a dash of vanilla extract)
- 1 tablespoon brown sugar (or your favorite sweetener)
- 1/2 teaspoon apple pie spice
- 1 cup ice cubes
- Place the ingredients in your blender in the order listed. Blend until smooth.
