    Blackberry Cocktail - A Fruity Cocktail Recipe!

    This Blackberry Cocktail is a fruity gin cocktail that is so delicious and so refreshing.   We love summer gin cocktails and this is one of our favorites!  With mint, cucumber, blackberries, lime, sugar, gin, and sparkling water you know it's going to be so good!  It's like summer in a glass.

    Summer Gin Cocktails

    The berries have started arriving at the farmer's markets, Memorial Day is over with, it's officially summer!  I buy as many strawberries, blueberries, raspberries and blackberries as I can carry. 

    Since I don't bake often, though I do have my eyes on blueberry cobbler in a new cookbook, I turn to cocktails.   While I love all summer cocktails, I make no secret of my love of gin.  

    I know gin is kind of like beets and cilantro, you either love it or you hate it.  I love it.  It's floral herby notes pair so well with summer's berries, it's delightful in martinis, like a strawberry martini and this blueberry elderflower martini.

    Pitcher Cocktails

    I was having some friends over and I knew I wanted to make them a fun summer cocktail, something that was delicious and refreshing.  Something we could sip as we sat out on the back porch. 

    I din't want to be getting up and mixing us new drinks every time we finished our cocktail, so a pitcher of cocktails was in order.  This blackberry cocktail recipe came from Cooking Light, but this roundup of Summer's Best Pitcher Cocktails from The View From Great Island has some amazing sounding cocktails!

    How to Make This Blackberry Cocktail

    Let's talk about how easy it is to make this fruity gin cocktail.  First gather your ingredients:  fresh mint, cucumber (sliced thin), blackberries, fresh lime juice (squeezed from about 3 limes,) sugar (turbinado sugar if you have it,) gin, and sparkling water or club soda. 

    Place the mint, cucumber slices, blackberries, lime juice and sugar in a pitcher.   Gently muddle the ingredients by either pressing on them with a wooden spoon or using a muddler.   

    Stir in the gin and the sparkling water.

    Garnish with extra mint leaves, blackberries and cucumber slices if you desire. 

    That's it!  How easy was that?

    Do you believe how easy it is to make this fun summer cocktail!  Not only is the color absolutely gorgeous, the flavor is light and fruity and perfect for sipping!  The combination of the sweet blueberries, the cool cucumbers, the tart lime juice, pair so wonderfully with the floral gin.

    Blackberry Cocktail

    A pitcher of these fruity gin cocktails will make your party the one to go to! Refreshing, delicious, easy and just look at that color!

    Ingredients

    • ¾ ounce fresh mint about 5-6 sprigs
    • 1 cucumber sliced thin
    • 12 ounces blackberries
    • ¾ cup lime juice fresh squeezed from about 3 limes
    • 8 teaspoons turbinado sugar or white sugar
    • 1 cup gin
    • 1 cup club soda or sparkling water
    • extra blackberries, mint and cucumber for garnish if desired

    Instructions

    • Place mint, cucumber slices, blackberries, lime juice and sugar into a pitcher. Use a wooden spoon or a muddler to gently release the flavors.
    • Stir in the gin and the club soda.
    • Garnish if desired.

    Notes

    Use fresh squeezed limes, not bottled. 
    Turbinado sugar is less processed than white sugar.  It will give a fuller more rounder flavor, however you can substitute white sugar.
