    Parsley Tomato Salad

    If you're looking for an incredible easy salad to use up summer's bounty of tomatoes, this Tomato, Parsley and Red Onion Salad is for you! 

    Tomatoes, parsley and red onions are tossed with a simple lemon juice and olive oil vinaigrette for a quick and easy salad side dish that everyone loves. 

    It's especially nice in the summer with fresh tomatoes from your garden or farmer's market, but we also love it in the winter with roma tomatoes or cherry tomatoes from the grocery store.

    Our farmer's market has been giving us the most gorgeous tomatoes lately.

    Even after using them in this Caprese Salad, I still had more tomatoes to use.

    I wanted to make something quick and easy that I could turn to time and time again.

    This tomato salad is the answer. We've already had it three more times!

    Tomatoes, red onions, parsley and a small bowl filled with lemon juice and olive oil.

    Ingredients

    Tomatoes - in the summer use fresh garden tomatoes, in the winter Roma or cherry from the grocery store will work too.

    Red onions - use sliced raw onions or my quick pickled red onions.

    Parsley - flat leaf is better than curly. I think it has more flavor.

    Extra Virgin Olive Oil - use the best that you have since there are so few ingredients in this salad, they all need to be good.

    Lemon Juice - fresh squeezed, not from a bottle.

    Salt and pepper - to taste. My husband likes lots of pepper on his and I like lots of salt on mine. So I lightly season the salad and then let everyone add more if they'd like.

    Instructions:

    Core and dice the tomatoes. I seeded mine a bit, by scraping out some of the excess seeds.

    Chop the parsley and thinly slice the red onions.

    Add all the ingredients to a bowl.

    In a mason jar, combine the olive oil and lemon juice. Shake to combine and pour of the salad.

    Toss and add salt and pepper to taste.

    Expert tip: If you want less of a bite to your raw red onions, thinly slice them first and add to the bowl. Shake together the vinaigrette and pour it over the onions. Let them sit, while you prepare the tomatoes and the parsley.

    See how easy that was!

    Consider this a base salad that you can absolutely serve as is.

    But it is so easy to add some additions. You could add cucumbers, bell peppers, olives, cheese (feta, goat, or parmesan) use a different herb besides parsley.

    Tomato and Parsley Salad

    This tomato salad is so easy to make, you'll make it all summer long.

    Ingredients

    • 6 cups tomatoes chopped
    • 1 cup fresh flat leaf parsley chopped
    • 1 cup red onion thinly sliced
    • 2 tbsp lemon juice fresh squeezed
    • 2 tbsp extra virgin olive oil
    • salt and pepper to taste

    Instructions

    • Combine tomatoes, parsley and red onion in a bowl.
    • Whisk together the lemon juice and olive oil or shake them in a lidded mason jar.
    • Pour the dressing over the salad and toss to combine. Taste and season with salt and pepper.

    Notes

    This salad is wonderful with fresh summer tomatoes, however you can make it year round with Roma or cherry tomatoes from the grocery store. 
    Can substitute Quick Pickled Onions for the red onions for even more flavor.
