    Frozen Raspberry Daiquiri

    Luscious and fruity, this Frozen Raspberry Daiquiri will be a summertime favorite! Gorgeous pink color, sweet and refreshing, everyone loves this tasty and tempting raspberry rum cocktail!

    So, remember last week when I made that gorgeous raspberry syrup that I drizzled over store bought cheesecake?

    I promised that I had would be back with some cocktails and here I am! First up we have this Frozen Raspberry Daiquiri!

    While I have never met a daiquiri that I didn't like, I have to admit that this one just might be my favorite!

    First of all that gorgeous color and second of all, it's crazy delicious! Fruity, sweet and tart!

    Rum, raspberry syrup and lime juice on a mirrored tray.

    Ingredients

    Rum - we used a light aged rum for this.

    Raspberry Syrup - this takes the place of the simple syrup that you would normally add here.

    Lime juice - fresh squeezed! We do ours in batches, it keeps in the fridge for up to a week.

    Raspberries - just a handful for a little fresh flavor (optional.) Be sure and try and buy organic, since berries can be heavily sprayed.

    Instructions (for 2)

    Add 4 ounces of rum to blender.

    Add 3 ounces of fresh squeezed lime juice.

    Add 1 ½ ounces of raspberry syrup to blender.

    Add a small handful of fresh raspberries to blender (optional.)

    Add 2 cups of ice to blender.

    Process until smooth and creamy.

    Pour into glass and garnish as you like! We like cocktail umbrellas!

    I know I said it in the first paragraph, but I have to say it again, these were so good!

    Crazy good.

    They are fruity and refreshing, a little sweet, a little tart. Your friends will love this fruity rum cocktail and if they don't, you need new friends.

    Frozen Raspberry Daiquiri

    Ingredients

    • 4 ounces light rum
    • 3 ounces lime juice fresh squeezed
    • 1 ½ ounces raspberry syrup
    • ½ cup raspberries optional
    • 2 cups ice

    Instructions

    • Add rum, lime juice and raspberry syrup to blender.
    • Add fresh raspberries (optional.)
    • Add 2 cups of ice to blender.
    • Process until smooth.

    Notes

    Fresh raspberries are optional, but I think they add some extra fresh flavor. 
    Note this recipe makes 2 generous daiquiris!
