We have a classic French Lentil and Beet Salad that can do double duty! It is the perfect side dish for roasted chicken or fish, but with some bread and served over a bed of lettuce it makes a great main dish!

Whenever I get a bunch of beets I always make Pickled Beets. My grandmother used to make them and I loved them and still do. They make the perfect side dish all winter long, are great added to salads and I sometimes stand at the fridge eating them right out of the jar!
