    Spring Capsule Wardrobe Basics!

Last week I showed you my Spring Capsule Wardrobe Jeans.   This week and next week, I will show you my final two bottoms that are a part of my spring capsule wardrobe.  At this point, I don't have any skirts.  As someone who works from home mostly and gets cold in restaurants, I don't find myself wearing a lot of skirts.  I might add one if I find one that I especially like, but for now I am happy with the 5 bottoms that I have chosen.

    Best Infused Gin Recipe!

There is something about warmer weather that makes me want to start infusing, canning, and preserving.  It’s some instinct that runs deep.  So, even though I had to go buy out of season cucumbers, I knew I wanted to make this Spicy Cucumber Gin from Infuse: Oil, Spirit, Water now.  I had specifically marked 9 things to try in that book and somehow had only gotten around to making the Sriracha Honey Popcorn – which was wonderful, by the way.   It’s funny, when I went to look up the link on Amazon, it told me that I had purchased the book last March 15th.  Exactly a year ago!  I told you that I start thinking about infusing right about now!

    Kitty Napping Among the Orchids

    Kitty among the orchids

Cat napping on a table among orchids

Happy St. Patrick's Day!  Oh, when we were younger Mr. Sidewalk Shoes and I enjoyed many a St. Patrick's Day.  Green beer.  Pub hops.  Silly hats.  Now, however, you'll most likely find us like Luxie kitty above.  No, not taking a nap among the orchids, but definitely taking it easy.

I've reached the stage in life where I don't want to go out on the big days.  You know.. Valentine's Day, New Year's Eve, etc.  So many people, so much traffic, so many impaired drivers.  I know I sound like an old fuddy duddy, and I'm not (other than I used the term fuddy duddy - which I don't think is even used anymore.)  It's just that I'm more than happy to stay in on those days and go out on regular days.

To say that I was excited to learn that my favorite cocktail book author Jules Aron was releasing two new books would be an understatement.  I was thrilled.  Her Zen and Tonic Book is my most favorite cocktail book of all time.   I've made so many things from it, including this Vanilla Infused Rum and these Boozy Bourbon Cocoa Pops.   I don't know which I am more excited about Fresh & Pure - with is homemade beauty balms and cleansers or Nourish & Glow which is foods and elixirs!

Honestly, it's going to be hard to pick a favorite!

    2016 Sentobene - a 100% Primitivo Wine

If you are anything like us, you may have never even heard of the Primitivo Grape, much less an actual 100% Primitivo Wine.  According to Wine Awesomeness,  even though you may have never heard of the primitivo grape, you have most likely tried it.  The dark-skinned Primitivo is an Italian grape known for producing deeply pigmented, high tannin, high-alcohol wines.   And guess what?  You probably know it by it's name in the states - Zinfandel!  Now if you do some research, you'll find some interesting articles about Primitivo and Zinfandel - Primitvo Vs. Zinfandel from WineGeeks or Aren't Primitivo and Zinfandel the Same Grape from Wine Spectator.  It turns out they are both clones from the same grape!

Jar of cabbage with a fermenting lid for making sauerkraut.

It is so easy to make homemade sauerkraut and my favorite way is in a mason jar!  When you taste how fresh it is, you'll never buy store-bought again!

Shredded cabbage in a mason jar with a fermenter lid on it.

I love sauerkraut and would eat it even if it wasn't great for us.  I read an article about probiotics and about how important they are for our gut health.  You can even buy probiotic supplements and some foods that don't normally contain probiotics are even being supplemented with them.

But why buy supplements when you can get your probiotics in Easy Homemade Sauerkraut?   The best part of making it yourself is that it can contain different strains of probiotics each time you make it!

    Vietnamese Zoodle Salad

    Mar 4, 2018 · 14 Comments

Zoodle salad on a scalloped plate.

Instead of a Vietnamese noodle salad try this delicious Vietnamese Zoodle Salad.

Spiralized carrots and zucchini pair with the Vietnamese flavors of mint and cilantro in this refreshing salad.

Makes the perfect easy light lunch or dinner!

Zucchini, carrots, mint, peanuts on a white scalloped plate.

I am way late to the zoodle party, but I am happy to have inaugural visit be this gorgeous Vietnamese Zoodle Salad!

I admit, I didn't get what the spiralizer fuss was about.  I mean, it's just veggies.  The same veggies that you've been eating for years.  Except now you make them long and stringy like noodles.

Then I got a Spiralizer.  And still, it sat there unused.  I dutifully pinned posts to my spiralizer board on Pinterest.

Then one day, I was staring at some zucchini from my CSA, and I thought, "zoodles, now is the time for zoodles."

    Za'atar Roasted Carrots with Labne

    Mar 1, 2018 · 21 Comments

    Za'atar Roasted Carrots with labne

All it takes is a little Za'atar seasoning and some labne to turn carrots from bland to wow in this Za'atar Roasted Carrots with Labne.   Roasted carrots are such an easy side dish and they get even sweeter when roasted!  Everyone loves these!

Blue plate filled with roasted carrots and a dollop of labne on the side.

    Roasted Carrots are so Delicious!

I have to admit, when contemplating what to make for a side dish, carrots are definitely flying under my radar.  I'm always looking for something exciting and carrots just don't seem to be trending.  They're not kale or quinoa or whatever new superfood we are eating this week.

They've been around forever.  We even had them when I was a kid, which we know makes them ancient.

But I'll tell you what, we never had them like this!  I am sure my grandmother never heard of Za'atar or labne.   This Za'atar Roasted Carrots with Labne couldn't be any easier, and it is amazing!  My husband was out of town, so I actually ate these for 3 days in a row and I could have kept on eating them, they are that good!

This will become your favorite roasted carrots recipe!

Shredded Pork Tacos with Pepita (Pumpkin Seed) Slaw

Shredded Pork Tacos with Pepita Slaw

These shredded pork, pinto beans and an incredible Pepita (Pumpkin Seed) Slaw make these tacos our new favorite!  Tender shredded pork, seasoned beans, and the best pumpkin seed and cabbage slaw!

Shredded Pork Tacos with Pepita Slaw - pork, pinto beans, pumpkin seeds, and cabbage make an amazing taco!

Shredded Pork Tacos with Pepita Slaw

There is so much to love about these Shredded Pork and Pinto Tacos with Pepita Slaw from Cooking Light, I don't even know where to begin!    First of all a small amount of lean pork tenderloin is cooked in a seasoned broth along with some shallots.

When you remove the pork to cool, you reduce sauce a bit to concentrate the flavors, and shred the pork.  Next comes the genius part, you add the pork back to the broth with some pinto beans!

The pinto beans extend the pork and when you mash a few of them it makes for a thicker filling.
