    I am all about using tequila in cooking, a girl can't live on margaritas alone!  This Tequila and Lime Chicken gets lots of flavor from the tequila lime marinade and roasts up tender with a lovely crispy skin.

    After I wrote my review for Nigella's, Simply Nigella,I spent a little bit of time trying to decide what I wanted to make first. Being me, I was looking for something easy.    I almost immediately settled on her Tequila Lime Chicken.

    Nothing beats a good marinated chicken for quick and easy. You can marinate the chicken for 6 hours or up to 2 days, so that gave me plenty of flexibility.

    Really is there anything better than a simple marinated chicken that then roasts up nice and crispy in the oven? No, there isn't.

    Using Vodka as Base for Ginger Liqueur

    A couple of weeks ago,  I shared with you a homemade Ginger Liqueur that was brandy based.   This week I am back with a vodka based Ginger Liqueur.  I started them both on the same day.  I figured, I had the ginger, I had the vodka, and I had the brandy, why not do a comparison.  They’ll both get used, so nothing to waste, no harm no foul.  I found this version at Degrees of Preparation.  It is very similar to last week’s recipe, the main difference between the base alcohol – in this case vodka, and whether or not a simple syrup was used.

    Sometimes as I walk through the house, I find the cats in moody light situations.  Like the above photos.  This is Luxie sitting on the television table looking out the window.  The window faces out into our screened in porch, so it lets in a very filtered light.  It's just enough light to be reflected on the white patches of Luxie's fur.

    Lately tacos have become one of my favorite foods to cook.  Tacos were probably one of the first things I ever cooked, though I confess that I used one of those taco kits, that comes with everything but the ground beef, you know what I'm talking about.   

    Nothing wrong with those at all.  I've rarely met a taco that I didn't like.  However, I have discovered a whole other world of Tacos.

    The other day on a recent trip to the liquor store to by some gin (something that occurs with an alarming frequency), I stumbled upon a gorgeous bottle of Ginger Liqueur.  It was golden yellow and in a gorgeous bottle.  I coveted the bottle almost as much as I coveted the ginger liqueur.

    What was equally gorgeous was the price tag.  $39.99!  To tempt me even further, it came with a cute little hanging tag that had several recipes listed.  I wanted to try them all.  I wanted that bottle.  Unfortunately I also wanted my forty bucks to stay in my wallet.

    Healthy Whole Grains

    I know that food trends come and go, but I hope that healthy bowls are here to stay.  My particular favorite is Grain Bowls.  I love that you can get your whole grains, fruits and veggies, and proteins all in one bowl.

    There are so many different whole grains to choose from for your bowls.  I really love farro, it's pretty easy to find in the store or you can order it from Amazon.  Once you get some, be sure and try this Roasted Asparagus and Prosciutto Farro Bowl or this Chicken and Sweet Potato Farro Bowl. 

    Quinoa also makes a great grain bowl, even though technically it's not a grain!  It's actually a seed, but it's classified as a pseudo-grain.  Besides making today's bowl, be sure and try Salmon with Ginger Quinoa and Balsamic Roasted Beets with Quinoa. 

    Don't forget brown rice! It's a whole grain that is readily available.  I love it in Edamame Brown Rice Bowl with Salmon and the simple Brown Rice Chicken Waldorf Salad.

    When someone says they don't have time to make dinner, they've obviously never made these Thai Beef Cabbage Wraps.  I've been making some version of these for years.  It's basically laarb.  Laarb is a northern Thai dish that is composed of ground meat, chiles, herbs, and spices.

    You can vary the meat - pretty much anything that you can find ground works.  I've used turkey, chicken, pork and beef.  You can vary the spices and the garnishes and even the wraps.  I usually see it served with lettuce wraps, as the Thai Crumbled Beef in Lettuce Wraps from Nigella Lawson that I used as inspiration.

    However, one summer our CSA gave us these adorable small heads of cabbage, and the already cupped leaves were perfect.  I loved the added flavor and crunch that the cabbage gave it and I haven't used lettuce since!

    I'm back with another post as I build my spring capsule wardrobe.  The past few weeks I've shared with you my bottoms:  Essential Jeans, Black Pants, and White Pants.   I'm back this week with the first of my spring capsule tops - a grey t shirt or a gray t shirt, depending on how you want to spell it!

    Above is my basic grey t shirt, I like both Mossimo from Target and Sonoma from Kohl's.  The Mossimo fits a little tighter and the Sonoma is a little looser.

    Do you have wild violets in your yard?  I do.  They are everywhere.  I pull them out in massive numbers and they seemingly pop back up over night.  Luckily I love them.  But really, if you show them any kind of love at all, they run rampant.  I’m trying to keep them out of my herb bed, but they are winning.

    As I walked around admiring them, I remembered the Crème de Violette that I had in the liquor cabinet.  Now would be a perfect time for a crème de violette cocktail.  After googling here and there, I found the Violette Royale – a super easy cocktail!

    Green Tea is So Good For You!

    I don't know about you, but I follow all the latest scientific evidence and studies on antioxidants and good for you foods.  The thing is they seem to change daily.  Butter - bad for you, then better than margarin for you.  Coffee, not so good, then yes, it's good.  Bacon - bad for you, then good for you.  Well, maybe I made up the one about the the bacon, but there are some foods that are high in antioxidants and everyone agrees on them.

    One of those is green tea.  Every morning, I try to have a cup of coffee, a cup of black tea, and a cup of green tea.  I like to try and cover all my bases.  But then I found an even easier way to make sure I had my green tea covered - Matcha Green Tea Powder.

    Looking for a Breakfast Pizza?  A Pizza with Egg?  Then look no further!  This Croque Madame Pizza is a delicious flatbread pizza with it's two kinds of cheese, pancetta and runny egg yolk is sure to become your favorite!

    To make this easy flatbread pizza you'll need:  cheddar cheese, gruyere cheese, sour cream, dijon mustard, Worcestershire sauce, flatbreads, pancetta and eggs.

    You guys, I have fallen in love with flatbread pizzas!  While I love a traditional pizza made with the traditional dough, I can't deny the allure of the ease of flatbread pizzas.   They are perfect for impromptu pizzas made with whatever ingredients you can find your fridge.  

    There are all kinds of flatbreads that you can use.  I typically grab naan bread, which conveniently usually comes in packages of two.  There are also packages just labeled flatbreads.  Either will work.   I've even used pitas for a quick pizza.
