    I have nothing against canning, it is a great way to enjoy summer's bounty all year round.

    But sometimes, you don't want the production that canning can sometimes feel like.

    Luckily you don't have to. Quick refrigerator pickles are my most favorite thing in the world. Whenever I have a bounty of veggies, I make a quick jar of refrigerator pickles and most of them are ready to eat the next day (though they get even better if left for a couple of days.)

    Quick pickles allow you extend the life of your veggies to about 3-4 months. Not as long as canning, but so easy and so enjoyable!

    Grilled Rosemary Potato Packets are so easy to make and so delicious! Simple wrap some sliced potatoes, olive oil, salt and pepper and rosemary in a foil packet and grill! The aroma of the potatoes and rosemary when you open the packets is amazing!

    Fun and Fruity Sherry Cobbler Cocktail

    If you haven't tried an old fashioned Sherry Cobbler, you are in for a treat! It's so easy to make, lower alcohol and you can garnish it as over the top as you'd like. The more over the top the better! Super refreshing and super easy to make!

    A sherry cobbler has been on my list of cocktails to try for ever! I loved the photos of them with all the fruit garnishes.

    They looked like a fun cocktail to make and to drink.

    I just kept forgetting to get some Amontillado Sherry. Finally, when I had a freezer full of berries (and felt like I do the garnish justice) I got some sherry.

    OMG. So easy to make and so refreshing and delicious! It's time for this classic to make a comeback!

    Sweet and Sticky Oven Baked BBQ Chicken Drumsticks

    No need to get out the grill when you can make these sweet and spicy bbq chicken drumsticks in the oven!  These easy baked chicken legs take only about 10 minutes of prep time and only 5 ingredients!

    Now, I love grilled chicken as much as anybody, but there are sometimes when you don't feel like messing with the grill.

    Even though I have a gas grill and there isn't much messing to do, there is something so satisfying about yummy bbq chicken legs that you made oh so easily in your oven!

    These sweet and spicy bbq chicken drumsticks only take about 10 minutes of prep work, have only 5 ingredients and are delicious!

    You just tweak some store bought barbecue sauce with some tasty additions, brush on the chicken legs and bake them.

    Possibly the easiest recipe on my blog and that is saying something for someone who's mantra is "easy simple recipes."

    Easy Raspberry Gimlet

    This Raspberry Gimlet is a gorgeous 3 ingredient gin cocktail that everyone loves! Fruity and refreshing and so easy to make!

    I can't believe I have never made a fruity gimlet before!! Truly one of the easiest cocktails to make!

    A gimlet is simply two parts gin to one part lime juice. Some recipes call for fresh lime juice and some call for Rose's Sweetened Lime Juice.

    Instead of using sweetened lime juice, I used half lime juice and half raspberry syrup.

    Just look at that gorgeous color and believe me, it tasted as good as it looks!

    The Best Chicken Dry Rub

    This is a basic barbecue rub that goes great on chicken or anything really! With only 6 ingredients that you already probably have in your pantry, you can easily make this dry rub.

    I want to work my way through some ideas of barbecue rubs, sauces and marinades. Give you a good solid core of grilling basics that you can turn to time and time again.

    I'm starting with this basic (but delicious) chicken dry rub. I am calling it a chicken rub, simply because it's really basic and I used it on chicken. You could also use it on beef, pork, or seafood!

    I revisited my Grilled Spatchcocked Chicken and instead of using the rosemary garlic marinade, I used this dry rub. Delicious!

    Raspberry Syrup

    Homemade raspberry syrup is so so fruity, delicious and versatile! Use it over baked goods, over ice cream, pancakes or in cocktails!

    Last week Publix had cheesecakes on sale. Cute little cheesecakes that I couldn't refuse.

    As soon as I saw that little plain cheesecake, I knew it needed something. A little something red, and sweet, and homemade.

    This raspberry syrup took the cheesecake to a whole new level and it might have caused grownups to actually lick their plates.

    When I realized that I could also use it in cocktails, I was even more in love.

    Grilled Chicken with Mango Watermelon Salsa

    The fresh flavors of summer in a wonderful grilled chicken dinner.  Juicy grilled chicken is topped with a fresh watermelon and mango salsa. Sweet and spicy and so delicious!

    Well, it's June and that means it's grilling season around here! We reorganized our back porch and I have a little grilling corner set up.

    Nothing like what the fancy chefs have, but I have a gas grill and wood pellet smoker all within easy reach. So expect more smoking and grilling recipes coming soon!

    Let's start with this easy grilled chicken recipe that I first made in 2014. I found it in an old issue of Cooking Light and modified it a bit.

    Chicken is marinated in a spicy olive oil and spice mixture. While it's marinating whip up a delicious watermelon mango salsa. With cilantro, jalapeño pepper and lime juice, it adds so much flavor.

    Chicken is grilled in about 10 minutes for an easy weeknight grilling recipe!

    Grilled Spatchcocked Chicken is the best way to grill a whole chicken! Crispy skin, juicy inside and cooked perfectly! So much quicker too!

    I first published this Grilled Spatchcocked Chicken back in 2009. I've since then made it hundreds of times, but apparently never came back and updated photos (you don't want to see the originals) or the text or added a recipe card.

    I am back today to right that wrong, because if there is one thing you need in your life, it's this.

    I actually have 3 spatchcocked chicken posts on my blog, back before I knew not to just keep calling something the same thing over and over again.

    So, I'm going to go back and update them in the next couple of weeks and have one smoked version and one oven roasted version. Stay tuned for updates.

    For those of you that don't know, spatchcocked chicken is split or butterflied chicken. But it's much more fun to use the older term, spatchcocked, don't you think?

    It provides a much more even surface for the grill and allows a whole chicken to grill in about 30 minutes.

    Easy 5 Minute! Carrabba's Bread Dip

    Anyone else love the bread dip from Carrabba's?  Now you can make this yummy Carrabba's olive oil bread dip at home in minutes!  Have a jar of this handy, just add olive oil and serve with your favorite warm bread for an instant appetizer!

    One of my favorite parts of eating out is the yummy bread dip that's served at restaurants.  I especially love the dip from Carrabba's and after learning how easy it was to make from home, there was no turning back! 

    There are different copycat versions of this dip.  Some use fresh herbs, some use dried, and some use fresh garlic.  I make mine using all dried herbs.  

    That way, I can keep a jar mixed up and ready to go any time I want.  Instant appetizer - or am I the only one that could make a meal of warm bread dipped into olive oil and herbs?

    Summer Manhattan Cocktail

    This Summer Manhattan is a light summery twist on a Manhattan.  Aperol and Prosecco step for the rye whiskey in this fun, bubbly cocktail!

    Sparkling Summer Cocktail

    I'm calling this a Summer Manhattan because that is what Valerie Bertinelli called it. I was perusing through her "One Dish at a Time" cookbook and was intrigued by the sound of this cocktail.

    In this recipe, Aperol and Prosecco take the place of Rye Whiskey. That's quite a substitution. One might argue that it takes it out of the Manhattan Cocktail range.

    If you think it's too far gone from a Manhattan, then may I suggest our Classic Manhattan.

    If you're willing to stray a little bit, then our Maple Manhattan and our Cranberry Manhattan might be more your style.

    But I'm not going to quibble. We loved this cocktail, it was light, bubbly and perfect for warm weather (or cool!) sipping.

    Growing up the only asparagus we had was from a can. It wasn't until I was at someone's wedding and they had tender fresh asparagus and people where talking about how amazing it was.

    Asparagus? Amazing? I had my doubts, but I gave it a try and have never looked back.

    Asparagus cooked correctly is so good, asparagus roasted is even better.

    After making herbed bread crumbs last week and using them on practically everything, I decided to make an Herb and Parmesan Roasted Asparagus.

    The Best Frozen Strawberry Daiquiri

    Herb Crusted Tilapia

    Think of these herb crusted tilapia as fish sticks taken to the next level!  Tilapia fillets are topped with a fragrant and flavorful herbed bread crumb crust and drizzled with melted butter.  A quick roast in the oven and you have the easiest baked tilapia that kids and adults will both love!

    When I was in college, my go to meal was a simple baked fish. I topped it with parmesan cheese and baked it in the oven. Served with my favorite blue box mac and cheese.

    While I spend countless hours pinning gorgeous cakes, cookies and cupcakes, when it comes to real life, those don't happen a lot in my kitchen!  What does happen a lot is biscotti.  

    Just type in biscotti in my search box and see!  I love how forgiving biscotti is.  It doesn't have to rise or stay moist or be rich and creamy.   Somehow biscotti always works.

    The batter can be super wet or super dry.  It can be so crumbly it barely holds together and so wet that I can barely get it off my hands, and yet, out comes perfect biscotti every time.  

    I don't understand it or question it, I just accept it.  This Hazelnut and Apricot Biscotti had the most perfect dough.  It was not too wet and not too dry.

    Aperol Spritz Cocktail

    Aperol Spritz Cocktail - an easy three ingredient cocktail that gets a festive flair from all the bubbles!   A favorite Prosecco cocktail with Aperol and club soda, so delicious and so pretty to look at!

    What is Aperol?

    If you haven't added Aperol to your bar, you need to.  It is an Italian apértif, made of gentian, rhubarb, and cinchona among other ingredients. 

    It has a gorgeous orange color and a unique bitter taste.  I love the flavor that it adds to cocktails.

    You might notice that it looks a lot like Campari.  They are similar and I love them both.   

    Some consider Aperol a bit more approachable.   It has a lower alcohol content and a softer flavor.

    So, when I saw that an Aperol Spritz Cocktail has only 3 ingredients, I knew that it would let all that wonderful Aperol flavor shine through.

    Herbed Bread Crumbs

    With just a few minutes of time and a few herbs you can make the most amazing herbed bread crumbs.   Use them in any recipe that calls for bread crumbs and easily add that wow factor!

    I was watching Wolfgang Puck make a tilapia recipe. He coated the tilapia with herbed bread crumbs and baked it.

    I made that Herb Crusted Tilapia and immediately realized that the breadcrumbs were amazing.

    The recipe made plenty of bread crumbs and I've been using them everywhere that I would use regular bread crumbs! They are so good and so versatile.

    Besides the Herb Crusted Tilapia, I've made Herbed Parmesan Roasted Asparagus and I plan on remaking this Cauliflower Baked Risotto with the herbed bread crumbs on top!

    Who doesn't love a good easy cocktail? I have rounded up 36 of my best 3 ingredient or less cocktails! That's right only 3 ingredients! Everything from rum, to whiskey, to gin and even some fun sparkling wine cocktails!

    This week I was a little more focused on cooking, so I went with super easy, super familiar cocktails.

    Then, I thought, hey, what if I do a roundup of 3 ingredients (or less) cocktails? Would I have enough to do a roundup?

    Um...yes...I had 36. And if you are reading this some time in the future, there are probably even more.

    3 Ingredient Gin Cocktails

    My easy go to cocktail of choice is a gin and tonic. They were my first "grown up" cocktail that I ever ordered and I still love them all these many years later!

    Today, I've got a collection of easy gin recipes. Classics like a Bees Knees and a Hanky Panky. A couple of Negroni variations - a White Negroni and a Frozen Negroni. Some sparkling variations - a Sloe Gin Collins and a Midori Gin and Tonic.

    Some of our favorite vodka cocktails have only two ingredients - A Spicy Moscow Mule, a Raspberry Vodka Tonic, a Cape Codder Cocktail, a Black Russian and a Greyhound.
