    Roasted Red Pepper Dip

    With just a few pantry ingredients, you can whip up this delicious roasted red pepper dip!

    This dip uses canned white beans for extra creaminess, no cheese necessary!

    If you are looking for the perfect quick and easy dip this is for you! Make with mostly pantry ingredients, you can whip up a batch of this anytime you want to! One of my favorite easy appetizers!

    I always keep a jar of roasted red peppers and a can of beans in the pantry just for this recipe. I love how good for you red bell peppers are - Health Benefits of Red Bell Peppers!

    This dip is super versatile. I use it with vegetables, as a quick pizza sauce, on bread for bruschetta topped with some grated cheese, drizzle it over rice bowls - the possibilities are endless.

    I found this recipe in an old cooking light magazine and I modified it slightly to use some lemon juice, which brightens the flavor a bit.

    Take chicken wings to a whole new level by smoking them!

    We used our Traeger Grill, but this technique works on any wood pellet smoker!

    Chicken wings are so fast and easy when you use your wood pellet smoker! If you search for recipes for smoked chicken wings, you'll see that a lot of people use a two step process. First they slow smoked them at a low temperature and then crank up the heat to crisp the skin, but that can take up to 3 hours!

    I've done that and it's good, but personally I like just putting my wings on the smoker and letting them do their thing, and it only takes about 35-45 minutes.

    Vietnamese Pickled Carrots

    These Vietnamese Pickled Carrots go with everything with their sweet and tart flavor!

    Add a burst of flavor to sandwiches, salads, stir fries just about everything with these quick carrot pickles!

    Don't let the name fool you, these Vietnamese Pickled Carrots go with everything! There is nothing that makes them particularly Vietnamese in flavor with just water, vinegar, sugar and salt, but they are a mainstay in Vietnamese cooking.

    You can include Daikon radish in with the carrots, but sometimes I have trouble finding that, so I usually make mine with just carrots.

    I always have a jar of these quick pickled carrots in my fridge. They are great on stir fries like this Pork Fried Rice, in salads like my Vietnamese Chicken Salad or they are amazing on sandwiches (I even add them to burgers!) they are a classic on a Ban Mi!

    Greek Village Salad

    This classic Greek salad is loaded with fresh vegetables, feta cheese and lemony olive oil dressing!

    I have always loved Mediterranean recipes and one of the first cookbooks I bought was The Olive and The Caper - Adventures in Greek Cooking (link in recipe card.)

    It is a cookbook, but it is so much more. There are stories, facts, photos all about Greece. The recipes are authentic and classic and always delicious! It is my go to book when I want to make a Greek recipe.

    Like this Greek Village Salad. This is what's called a chopped salad - in that it is composed of chopped vegetables all kind of about the same size. The classic Greek salad does not include lettuce - but I do have Greek Salad with Lettuce version too if you like yours with lettuce. I even have a Kale Greek Salad.

    Can you tell I love Greek salads?! The mix of salty feta and olives with cucumbers and tomatoes and sweet bell peppers is just so good!

    Easy Chicken Taco Salad

    Loaded with yummy ingredients like shredded chicken, black beans and corn, this chicken taco salad is an easy and healthy dinner!

    No need for take out when you can make this easy salad in about 30 minutes at home! The secret is rotisserie chicken, canned beans and frozen corn!

    I love taco salads, but the ones you get at restaurants are loaded with calories! I found this recipe from Cooking Light that loads up on beans and veggies and uses less fat cream cheese to give you a creamy dressing.

    Instead of using fried tortilla chips, you make your own by cutting tortillas into strips, spraying them with cooking spray (avocado is great) and then baking them.

    The other secret to quick and easy taco salad with chicken is using rotisserie chicken! If you have any leftover be sure and check out my roundup of Rotisserie Chicken Recipes.

    Ingredients.

    • Corn tortillas - or use chips if you don't want to make your own chips.
    • Salsa verde.
    • Cream cheese - can use lower fat.
    • Shredded cooked chicken - from a rotisserie chicken.
    • Green onions, red bell pepper, cilantro, lettuce and radishes.
    • Canned black beans and frozen corn - can use fresh corn.
    • Lime juice, olive oil and chipotle chili powder.

    Step by step instructions.

    Make the tortilla strips.

    Preheat the oven to 450°F. Cut the tortillas into ¼ inch slices. Place on a cookie sheet and spray with cooking spray and sprinkle with chili powder (chili powder is optional.) Bake for 5 minutes or until crispy and golden.

    Prepare the chicken.

    Over medium heat, add salsa and cheese to pan. Stir, cooking for about 4 minutes or until cheese melts. Stir in chicken and cook for about 1 more minute. Stir in the onions and one tablespoon of lime juice. Remove chicken mixture to a bowl and wipe out the pan.

    Prepare the veggies.

    Return the pan to the heat and turn it up to medium high. Add oil to the pan and sauté the beans, corn and red bell pepper for a couple of minutes or until crisp tender. Stir in the cilantro.

    Assemble the salad.

    Whisk together 1 tablespoon lime juice with 1 tablespoon olive oil in a large bowl. Add the lettuce and toss to coat. Divide the lettuce mixture between 4 plates. Divide the chicken between the plates and then divide the corn/bean mixture. Top with tortilla strips and radishes.

    This is so good and so easy! You can make it as hot as you'd like by choosing a spicier salsa.

    It is definitely lighter than the heavy ranch style taco salads you find at a lot of places. But the cream cheese makes it feel a bit more indulgent.

    Ingredients

    • 6 6-inch corn tortillas cut into ¼ inch strips
    • cooking spray
    • ¼ teaspoon ground chipotle chili powder optional
    • 1 cup salsa verde
    • ⅓ cup low fat cream cheese
    • 3 cups cooked chicken shredded
    • ½ cup green onions sliced
    • 2 tablespoons lime juice fresh squeezed
    • 5 teaspoons extra virgin olive oil
    • ⅔ cup black beans canned, rinsed and drained
    • ⅔ cup corn frozen, thawed
    • ⅔ cup red bell pepper chopped
    • ¼ cup fresh cilantro chopped
    • 6 cups romaine lettuce chopped
    • 3 radishes thinly sliced

    Instructions

    • Preheat oven to 450°F. Place tortilla strips on a baking sheet and spray with cooking spray and sprinkle with chili powder. Bake for about 5 minutes or until golden and crisp. Let cool.
    • Over medium heat, in a medium skillet, stir together the cream cheese and salsa. Cook stirring about 4 minutes or until cheese melts. Stir in shredded chicken and cook for about a minute. Stir in onions and lime juice. Scoop out into a bowl and keep warm. Wipe out skillet.
    • Add oil to skillet and over medium high heat sauté the beans, corn and red bell pepper for about 2 minutes or until crisp tender. Turn off the heat and stir in the cilantro.
    • In a large bowl, whisk together 1 tablespoon lime juice and 1 tablespoon oil. Add lettuce and toss to coat.
    • To serve - divide lettuce between 4 plates. Divide the chicken mixture between the plates and then top with corn/bean mixture. Serve with the tortilla strips and radishes.

    Notes

    Can substitute tortilla chips if you don't want to make your own. 
    I like to use a combination of white meat and dark meat.

    20 Marinades, Rubs and Brines for Grilling Season!

    Whether you are grilling chicken, meats or seafood you'll find a marinade, a rub or a brine adds just so much flavor! Many tenderize, keep the food juicy and add flavor!

    Best marinades for grilling.

    Nothing beats an easy marinade to add so much flavor to food! While some of these might specifically say pork or chicken, you can use them on just about any protein and also on veggies!

    Even though I do specify these for grilling, they are also amazing when you are planning on roasting your dinner.

    1. Rosemary garlic marinade.

    In my post I call this a rub, but since it does have some liquid, it really is a marinade.

    It is amazing how much flavor you get when you combine garlic, rosemary, salt and olive oil.

    2. Spiced, oregano and garlic.

    This grilled chicken with mango watermelon salsa gets a lot of flavor from a quick marinade.

    Oregano (either fresh or dried,) garlic, olive oil, chili powder, cumin and salt get rubbed on boneless, skinless chicken breasts. A little spicy, a little herby and a little garlicky!

    3. Piri Piri Marinade.

    This recipe for piri piri chicken is a real winner!

    First the flavorful marinade which is made of garlic, crushed red pepper flakes, smoked paprika, lemon juice, red wine vinegar, olive oil and salt and pepper.

    If that wasn't enough flavor for you, there is also a dip recipe included made out of green chilies, cilantro, olive oil, lemon juice, mayo, and sour cream. I love to serve this dip with rotisserie chicken too!

    4. Tahini with coconut milk.

    These grilled tahini pork skewers are going to become a summer staple at your house!

    Pork only needs to marinate for 15 minutes to soak up all the flavors in this marinade.

    Coconut milk, tahini, fish sauce, honey, lime juice and sesame oil create a sweet, salty, citrusy flavor explosion!

    5. Mojo marinade.

    Chicken only needs 2-4 hours to soak up all the flavor in this amazing marinade! I used it on these smoked chicken thighs, but you could just grill the thighs or even roast them in the oven. It's also amazing on pork.

    With ingredients like orange zest, orange juice, lime juice, garlic, cilantro, olive oil, cumin, oregano and salt, you know it's a winner!

    6. Teriyaki.

    If you're looking for a kid pleasing marinade, this one is for you! I used it on smoked chicken legs, but I've also just roasted these in the oven - so good!

    7. Lemongrass, honey and ginger.

    This lemongrass, honey and ginger marinade is so lemony, sweet and just about perfect.

    You'll need lemongrass (sometimes I buy those tubes of lemongrass paste if I can't find stalks,) garlic, ginger, honey and fish sauce.

    I'm using it on pork skewers, but it's also great on chicken or beef!

    8. Pineapple teriyaki.

    One of my favorite bloggers, Urban Bliss Life, has this recipe for Grilled Pineapple Chicken that is in regular rotation at our house!

    9. Turmeric yogurt.

    We are huge fans of turmeric at our house, not just because it's so good for you, we love the color and flavor that it brings to everything. So, when I saw these Turmeric Chicken Kebabs at Nourished Kitchen, we had to give them a try!

    10. Herb honey marinade.

    This Herb and Honey marinade from Cook, Clean, Repeat will definitely be on repeat at your house!

    It has all the classic ingredients: Dijon mustard, shallots, honey, olive oil, lemon juice, Herbs de Provence, rosemary and oregano!

    Favorite rubs for grilling.

    Rubs have a slight advantage over marinades in that you can make them ahead of time and store them in an airtight jar in your pantry. I currently have 6 jars of rubs in my pantry! They are perfect to add a lot of flavor, with the least amount of work!

    Only 6 ingredients and the perfect combination of sweet and spicy!

    We love this on pork chops, tenderloin and shoulder. I also love it on salmon!

    The best brines for grilling!

    Brines are a great way to get the seasonings really deep in the meat of whatever you are grilling. They also helps keep everything extra juicy.

    You can use brines alone or in combination with rubs! If you are using a brine that is heavy on the salt, you probably want to cut back on the salt in your rub.

    When you don't feel like messing with the grill, pan grilling is the answer! It's such an easy way to get those grill marks and perfectly cooked food. Though if you are in the mood for grilling try our Grilled Salmon with Tomato Caper Vinaigrette.

    I especially love it for fish, like salmon, because it cooks so quickly, it takes longer to set up the grill than it does to cook it. Plus the quick cooking time on the pan grilling results in perfectly cooked fish.

    Salmon Salad with White Beans

    This salmon salad with white beans is so easy to make, it's the perfect quick, light dinner!

    Salmon, white beans, olives and roasted red bell peppers are tossed in a flavorful vinaigrette for this easy main dish salad.

    I have been making this salad for years and only finally got around to posting it!

    It is my go to salad when I want us to eat a healthy dinner that also tastes amazing. Everything in this salad is good for you, from the salmon to the white beans to the roasted red bell peppers.

    I found this article on How Healthy White Beans are, so interesting, I thought you might too! They are packed with fiber and protein!

    This original recipe came from Epicurious and it included grilling the salmon and the red bell peppers. I usually use leftover cooked salmon (roast some extra when you make Tray Baked Salmon and Green Beans) and I use those big jars of roasted red bell peppers from Costco. Making it a much easier and quicker dinner.

    Ingredients.

    • Cooked salmon - 3-4 fillets. (I give instructions for a quick way to cook salmon in the notes of the recipe card, in case you don't have any cooked salmon.)
    • Olive oil and lemon juice.
    • Roasted red bell peppers.
    • Canned white beans.
    • Cherry tomatoes.
    • Black olives - I like kalamata.
    • Salad greens.
    • Fresh basil and parsley.

    Step by step instructions.

    If you don't have any cooked salmon, you can do a quick pan sauté or roast in the oven (details in the notes section of the recipe card.)

    Chop up the salmon and add it to a large bowl. Drain and rinse the beans and add them to the bowl. Add fresh squeezed lemon juice and olive oil. Toss and let it sit while you prepare the rest of the ingredients.

    Chop the roasted red bell peppers, cut the tomatoes and olives in half and chop the basil and parsley.

    Add the peppers, tomatoes, olives and herbs to the salmon mixture. Toss and taste, adjust salt and pepper to taste.

    Serve the salmon mixture on top of the salad greens.

    This is your answer to what's for dinner! Even if you have to cook the salmon, you can still have dinner on the table in about 20-25 minutes. I haven't tried this with canned salmon, but I don't see why it wouldn't work!

    This is easy, healthy, light and yet filling! Serve with some bread and a glass of wine and you have an elegant little dinner!

    Salmon Salad with White Beans

    Ingredients

    • ½ pound cooked salmon see notes if you don't have cooked salmon
    • 1 lemon juiced
    • 3 tablespoons extra virgin olive oil
    • 3 cups white beans canned, rinsed and drained
    • 10 cherry tomatoes halved
    • 1 ½ cups roasted red bell peppers chopped
    • 10 kalamata olives halved
    • ¼ cup basil leaves minced
    • ¼ cup fresh flat leaf parsley minced
    • 4 cups salad greens
    • salt and pepper to taste

    Instructions

    • In a medium bowl, combine the salmon, beans, lemon juice and olive oil. Toss to combine. *See notes if you need to cook the salmon.
    • Cut the cherry tomatoes and olives in half. Chop the parsley and basil. Chop the red bell peppers.
    • Add the tomatoes, olives, herbs and bell peppers into the bowl with the salmon. Toss and add salt and pepper to taste.
    • Divide the salad greens among four plates and top evenly with the salmon mixture.

    Notes

    If you need to cook the salmon.  You can sauté it in a a little olive oil over medium high heat for 3-4 minutes per side, starting with skin side up.  Or you can roast it on a parchment lined baking sheet by drizzling it with a little olive oil, salt and pepper and roasting it at 425°F for 6-8 minutes depending on thickness.
